本研究主要采取定性分析和定量分析相结合的原则，首先通过定性的研究方法，提出了食物质量安全的基本内涵，探索划分了食物质量安全内涵演变的四个阶段，归结出三类食物质量安全的主要引发因素，较为完整地表述了食物质量安全技术的含义及其特征，并首次对食物质量安全技术从技术支撑阶段、技术功能差异、技术目标侧重和研究所属领域的四个角度进行了分类，在此基础上，建立了食物质量安全技术“关键性”评价指标体系。
